Fix Approved Turkey Meatballs

I say "fix approved" like most food isn't acceptable on this program...yet, it is! That is the beauty of the Fix. I have learned how to eat pretty much everything I love, in cleaner, more healthy versions & in the proper portion size so in order to get results or maintain my lifestyle. It all depends on the season of my life. ;) 

These have a very neutral flavor so they go well with any dish. Here are some ideas of things you can add or do when you serve them.

Add Buffalo, BBQ or your favorite Asian flavored sauce
Make an opened faced meatball sub & add a little organic marinara
Serve them w/ a salad
Pick a sauce of your choice, add veggies & brown rice

And so much more!

Anyways, you are here for a recipe not for my nonsense...so here it is, my first meatball love (other than the slow cooker ones)

Turkey Meatballs

What you need:
1.5lb 93% Lean Ground Turkey
1 tsp sea salt
1 tsp dry mustard
1 tsp paprika (it calls for smoked, I use regular)
1 large egg, lightly beaten
¾ C quick-cooking rolled oats
2 cloves garlic, finely chopped (I use maybe ½ tsp of freeze dried garlic, we aren’t huge garlic people in our house)
12 fresh parsley sprigs, finely chopped (I use freeze dried parsley, a heaping TBSP)
2 tbsp tomato sauce, no sugar added

Preparation: 
1.     Preheat oven to 400 degrees.
2.     Lightly coat a large baking sheet with nonstick spray, set to the side.
3.     Combine all ingredients in a large bowl and mix well by hand.
4.     Roll mixture into 30 1inch meatballs.  Place on the prepared sheet.
5.     Bake for 15-20 minutes or until no longer pink in the center.

Makes 6 servings, 5 meatballs each.

And my tip is to double it! Yes, you heard me....60 meatballs. But that means extra for the fridge or freezer so you have food ready to go when you need it!
